Wednesday, January 1st: CHAOURCE – New Year’s Menu. At “Cadusia” from noon. Meal: Appetizer: Oyster in seawater jelly – Scallop tartare, citrus, radish, cucumber on its raita. Extra foie gras, pear in wine and spices, hazelnut condiments and brioche. Poached sea bass in champagne, shellfish/leeks. While waiting for the main course: Passion fruit sorbet and champagne ratafia. Poultry in yellow wine and morels, apple ana – pumpkin, roasted squash seeds. Comté – chaource and beggar’s fruit bread.
